4 salmon fillets (6 oz each)

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 cups broccoli florets

2 cups baby carrots

2 cups cherry tomatoes, halved

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the marinade: In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, thyme, oregano, smoked paprika, salt, and black pepper. This will be the marinade for the salmon.

      Marinate the salmon: Place the salmon fillets in a shallow dish or a zip-lock bag and pour the marinade over them, ensuring they are well coated. Let the salmon marinate for at least 15 minutes at room temperature.

        Prepare the vegetables: On a large baking sheet, toss the broccoli, baby carrots, and cherry tomatoes with the remaining 2 tablespoons of olive oil, a pinch of salt, and black pepper. Spread the vegetables out in a single layer.

          Roast the veggies: Place the baking sheet in the preheated oven and roast the vegetables for about 10 minutes until they’re just starting to soften.

            Add the salmon: After 10 minutes, remove the baking sheet from the oven, move the veggies to one side, and place the marinated salmon fillets skin-side down on the open side of the baking sheet. Squeeze half the lemon juice over the salmon and veggies.

              Finish roasting: Return the baking sheet to the oven and roast everything for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the veggies are tender with slight caramelization.

                Serve: Remove from the oven and garnish with fresh parsley and the remaining lemon juice. Serve immediately with additional lemon wedges, if desired.
