Ingredients

4 slices of sourdough bread

6 oz aged Gouda cheese, sliced

1 medium apple (such as Honeycrisp or Granny Smith), cored and thinly sliced

2 tbsp unsalted butter

1 tbsp honey (optional, for drizzling)

Pinch of sea salt

Freshly cracked black pepper (optional)

Instructions

Prep the Bread: Start by laying out your slices of sourdough bread on a clean surface. Spread a thin layer of butter on one side of each slice.

Assemble the Sandwich: On the unbuttered side of two slices, layer the Gouda cheese evenly. Arrange the apple slices on top of the cheese, adding a pinch of sea salt and freshly cracked black pepper if desired. Top with the remaining Gouda cheese for a melty middle. Place the other two slices of sourdough on top, buttered side facing out.

Grill the Sandwiches: Heat a non-stick skillet over medium heat. Carefully place the sandwiches in the skillet. Cook for about 3-4 minutes or until golden brown and crispy. Gently press down with a spatula to ensure even cooking.

Flip: Carefully flip the sandwiches over and continue to cook for another 3-4 minutes until the second side is also golden brown and the cheese is melted.

Finish and Serve: Once done, remove the sandwiches from the skillet. Allow them to cool for a minute, then drizzle with honey if using. Slice in half and serve warm.
