Ingredients

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

2 large eggs

1/4 cup cold water

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Vegetable oil for frying

For the Honey Sauce:

1/2 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 teaspoon sesame oil

1 tablespoon sesame seeds (for garnish)

Chopped green onions (for garnish)

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with garlic powder, onion powder, salt, and pepper. Let it marinate for at least 30 minutes to enhance the flavor.

Prepare the Batter: In a large mixing bowl, whisk together the flour, cornstarch, and baking powder. In a separate bowl, beat the eggs and add cold water. Pour the egg mixture into the dry ingredients, mixing until you have a smooth batter.

Coat the Chicken: Dip each marinated chicken piece into the batter, ensuring it is well coated. Let any excess batter drip off.

Heat the Oil: In a deep skillet or fryer, heat about 2 inches of vegetable oil to 350°F (175°C).

Fry the Chicken: Carefully add the coated chicken pieces in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes or until the chicken is golden brown and crispy. Remove using a slotted spoon and drain on paper towels.

Make the Honey Sauce: In a small saucepan over medium heat, combine honey, soy sauce, rice vinegar, grated ginger, minced garlic, and sesame oil. Bring to a simmer and cook for about 3-4 minutes until it thickens slightly.

Combine Chicken and Sauce: In a large mixing bowl, pour the hot honey sauce over the fried chicken and toss gently until fully coated.

Garnish and Serve: Transfer the honey chicken to a serving platter, sprinkle with sesame seeds and chopped green onions. Serve immediately and enjoy the crispy sweetness!
