Crispy Honey Garlic Chicken Bites

1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional for heat)

2 large eggs

1 cup breadcrumbs (Panko for extra crunch)

Vegetable oil (for frying)

For the Honey Garlic Sauce:

1/2 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

Sesame seeds (for garnish)

Chopped green onions (for garnish)

Instructions
 

Prep the Chicken Bites: In a large bowl, combine the all-purpose flour, salt, black pepper, garlic powder, paprika, and cayenne pepper. Mix well. In another bowl, beat the eggs. Set a third bowl with the breadcrumbs nearby.

    Coat Chicken Pieces: Take each piece of chicken, dip it into the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing gently to ensure the crumbs stick well. Repeat until all chicken pieces are coated.

      Heat Oil: In a large skillet or deep pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). Make sure the oil is hot enough to fry the chicken bites without them becoming soggy.

        Fry the Chicken: Carefully place the coated chicken pieces into the hot oil, cooking in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to transfer the chicken bites to a paper towel-lined plate to drain excess oil.

          Make the Honey Garlic Sauce: In a small saucepan over medium heat, combine the honey, soy sauce, minced garlic, minced ginger, and rice vinegar. Stir and bring to a simmer. In a separate small bowl, mix the cornstarch with water until smooth, then add to the sauce. Stir until the sauce thickens (about 2-3 minutes). Remove from heat.

            Combine Chicken and Sauce: Place the fried chicken bites in a large bowl. Drizzle the warm honey garlic sauce over them and toss gently until all the pieces are well coated.

              Serve and Garnish: Transfer the chicken bites to a serving platter. Garnish with sesame seeds and chopped green onions. Enjoy hot!
