1 pound sea scallops (fresh or thawed, preferably dry-packed)

4 tablespoons unsalted butter, divided

3 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1 teaspoon paprika

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Scallops:

    - Rinse the scallops under cold water and pat them dry with paper towels. It's important to ensure they are very dry to achieve that perfect crispness.

      Season the Scallops:

        - Lightly season both sides of the scallops with salt, pepper, and paprika.

          Heat the Pan:

            - In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat until the butter is melted and starts to foam.

              Sear the Scallops:

                - Add the scallops to the skillet in a single layer being careful not to crowd them. Sear for 2-3 minutes without moving them, until a golden brown crust forms. Flip and cook for an additional 2 minutes on the other side until opaque. Remove scallops from skillet and set aside.

                  Prepare the Sauce:

                    - In the same skillet, lower the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and lemon zest. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
