2 medium zucchinis, grated

1 teaspoon salt (for draining zucchini)

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 large egg

2 green onions, finely chopped

3 cloves garlic, minced

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

1/2 teaspoon black pepper

1/2 teaspoon oregano

1/4 teaspoon red pepper flakes (optional, for heat)

Olive oil (for frying)

Instructions
 

Prepare Zucchini:

    - Grate the zucchinis and place them in a clean kitchen towel. Sprinkle with 1 teaspoon of salt and let them sit for about 10-15 minutes. This will help to draw out excess moisture.

      Squeeze Out Moisture:

        - After resting, gather the corners of the kitchen towel and twist to squeeze the grated zucchini until as much moisture as possible is removed. This step is crucial for crispy fritters.

          Mix Ingredients:

            - In a large mixing bowl, combine the drained zucchini, flour, grated Parmesan cheese, egg, green onions, minced garlic, lemon zest, lemon juice, black pepper, oregano, and red pepper flakes. Mix until all ingredients are well incorporated.

              Heat Oil:

                - In a large skillet, heat about 1/4 inch of olive oil over medium heat. Ensure the oil is hot enough by dropping a small spoonful of the mixture into the pan—if it sizzles, it’s ready.
