1 medium head of cauliflower, cut into bite-sized florets

1 cup breadcrumbs (preferably Panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon black pepper

1 teaspoon salt

2 large eggs

¼ cup all-purpose flour

Fresh parsley, finely chopped (for garnish)

Olive oil spray or cooking spray

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Breading Station: In a shallow dish, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. In another shallow dish, place the flour. In a third shallow bowl, beat the eggs.

      Coat the Cauliflower: Working in batches, dredge each cauliflower floret in flour, shaking off the excess. Then dip it into the beaten eggs, allowing the excess to drip off. Finally, coat it in the breadcrumb mixture, pressing firmly to ensure it adheres well. Place the coated florets on the prepared baking sheet.

        Spray with Olive Oil: Lightly spray the breaded cauliflower bites with olive oil spray for extra crispiness.

          Bake: Bake in the preheated oven for about 25-30 minutes, turning halfway through, until the cauliflower bites are golden brown and crispy.
