Ingredients

4 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, thyme, basil)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

Olive oil spray (or cooking spray)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Coating: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and black pepper. Mix well until evenly combined.

Prepare the Egg Mixture: In another bowl, whisk together the eggs and Dijon mustard until smooth.

        Coat the Zucchini:

          - Dip each zucchini slice first into the egg mixture, allowing any excess to drip off.

            - Then, coat it in the breadcrumb and cheese mixture, pressing lightly to adhere. Place the coated zucchini slices in a single layer on the prepared baking sheet.

Spray with Olive Oil: Lightly spray the tops of the zucchini slices with olive oil spray to enhance crispiness.

Bake: Bake in the preheated oven for 25-30 minutes, or until the zucchini are golden brown and crispy. Flip them halfway through the baking time for even crispiness.

Serve: Remove from the oven and let cool for a couple of minutes. Serve warm as a delicious appetizer or side dish, perhaps with marinara sauce or a ranch dip for added flavor!
