Ingredients

For the Salad:

12 frozen dumpling-style potstickers, any variety (vegetable, chicken, etc.)

4 cups mixed greens (spinach, arugula, and romaine)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cucumber, julienned

1 avocado, diced

¼ cup sliced green onions

Sesame seeds, for garnish

For the Zesty Sesame Dressing:

¼ cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

1 clove garlic, minced

1 teaspoon sriracha (optional for heat)

1 tablespoon sesame seeds

Instructions

Cook the Potstickers:

    - In a large skillet, heat 1 tablespoon of oil over medium heat. Place the frozen potstickers in the skillet, ensuring they’re not overcrowded.

      - Cook for 2-3 minutes until the bottoms are golden brown.

        - Add ½ cup of water to the skillet, cover it with a lid, and steam for about 5-7 minutes until the water has evaporated and the potstickers are cooked through.

          - Remove the lid and let them cook for an additional 2 minutes to get crispier. Transfer to a plate and let them cool slightly.

            Prepare the Salad Base:

              - In a large salad bowl, add the mixed greens, shredded carrots, sliced bell pepper, julienned cucumber, and diced avocado. Toss gently to combine.

                Make the Dressing:

                  - In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and sriracha (if using).

                    - Stir in the sesame seeds until well combined.

                      Assemble the Salad:

                        - Pour half of the zesty sesame dressing over the salad and toss gently to coat all ingredients.

                          - Allow the flavors to meld for about 5 minutes.

                            Serve:

                              - Divide the salad into serving bowls. Top each with the crispy potstickers and drizzle with the remaining dressing.

                                - Garnish with sliced green onions and a sprinkle of sesame seeds.

                                  Enjoy!

                                    - Serve immediately while the potstickers are hot and crispy, and enjoy this crunchy, refreshing salad.
