Crispy Ranch Chicken Tenders

1 pound boneless, skinless chicken breasts, cut into tenders

1 cup buttermilk

1 packet ranch seasoning mix

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Vegetable oil for frying (about 2 cups)

Marinate the Chicken: In a medium bowl, combine the buttermilk and half the ranch seasoning mix. Add the chicken tenders, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or up to overnight for better flavor).

    Prepare the Breading Stations: In a shallow dish, mix together the flour, remaining ranch seasoning, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. In another shallow dish, place the panko breadcrumbs.

      Bread the Chicken:

        - Remove the chicken tenders from the buttermilk mixture, allowing the excess to drip off.

          - Dredge each tender in the seasoned flour, shaking off any excess.

            - Dip back into the buttermilk, then coat thoroughly with panko breadcrumbs, pressing gently to adhere.

              Heat the Oil: In a large skillet, pour in enough vegetable oil to cover the bottom (about ½ inch deep) and heat over medium heat until it reaches around 350°F (175°C). To test, drop a small piece of bread in the oil; it should sizzle immediately.

                Fry the Chicken Tenders: Working in batches to avoid overcrowding, carefully place the breaded chicken tenders in the hot oil. Fry until golden brown and crispy, about 4-5 minutes per side. Use tongs to flip them halfway through cooking.

                  Drain and Serve: Once cooked, transfer the crispy chicken tenders to a plate lined with paper towels to drain any excess oil.
