2 medium zucchini, sliced into ¼-inch rounds

1 cup all-purpose flour (or gluten-free flour)

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded cabbage

½ cup fresh cilantro, chopped

1 ripe avocado, sliced

Lime wedges, for serving

Spicy salsa or hot sauce (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: In a shallow bowl, mix the flour with salt, pepper, garlic powder, smoked paprika, and cumin. In a separate bowl, whisk the eggs. In a third bowl, add the panko breadcrumbs.

      Coat the Zucchini: Dip each zucchini slice into the flour mixture, shaking off any excess. Then, dip it into the egg to coat, and finally press it into the panko breadcrumbs to coat evenly. Place the coated zucchini slices on the prepared baking sheet.

        Bake the Zucchini: Once all slices are coated, spray them lightly with cooking spray or drizzle with olive oil. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown and crispy.

          Prepare the Tacos: While the zucchini is baking, warm the tortillas in a skillet over medium heat for about 30 seconds on each side, or until warm and pliable.

            Assemble the Tacos: Once the zucchini is done, build your tacos by placing a few crispy zucchini rounds on each tortilla. Top with shredded cabbage, sliced avocado, and fresh cilantro.

              Serve: Serve the tacos warm with lime wedges on the side and drizzle with spicy salsa or hot sauce if desired.
