Crock Pot Beef Tips and Gravy

2 lbs beef stew meat (chuck or round)

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 cup mushrooms, sliced

1/4 cup soy sauce

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

2 teaspoons paprika

1 teaspoon black pepper

1 teaspoon salt (to taste)

1/4 cup all-purpose flour (for thickening)

2 tablespoons olive oil

Fresh parsley (for garnish)

Instructions
 

Brown the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the beef stew meat in batches and sear until golden brown on all sides. Remove the browned beef and set aside.

    Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onions become translucent and softened.

      Combine Ingredients: In the crock pot, combine the seared beef, sautéed onions and garlic, mushrooms, beef broth, soy sauce, Worcestershire sauce, thyme, paprika, black pepper, and salt. Stir well to combine all the flavors.

        Cook: Cover the crock pot and cook on low for 6-8 hours, or on high for 4-5 hours, until the beef is tender and falls apart easily.

          Thicken the Gravy: About 30 minutes before serving, mix the all-purpose flour with a few tablespoons of the cooking liquid from the crock pot to create a slurry. Add this mixture back into the crock pot and stir thoroughly. This will thicken the gravy as it finishes cooking.

            Serve: Check for seasoning and adjust salt and pepper as needed. Ladle the beef tips and gravy over mashed potatoes, rice, or egg noodles. Garnish with freshly chopped parsley before serving.
