Ingredients

3 lbs beef chuck roast

1 large onion, sliced

4 cloves garlic, minced

1 cup beef broth

1 cup BBQ sauce (your favorite brand or homemade)

2 tablespoons Worcestershire sauce

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

6 hamburger buns

Coleslaw (optional, for serving)

Instructions

Prepare the Beef: Trim excess fat from the beef chuck roast and season with salt, pepper, smoked paprika, and chili powder. Rub the spices all over the roast.

Layer Ingredients in the Crockpot: Place sliced onions and minced garlic at the bottom of the crockpot. Place the seasoned roast on top.

Mix the Sauce: In a separate bowl, combine the beef broth, BBQ sauce, Worcestershire sauce, brown sugar, and apple cider vinegar. Whisk until well blended.

Pour over the Beef: Carefully pour the sauce mixture over the beef in the crockpot. Ensure the roast is well covered with the liquid.

Cook: Cover the crockpot with the lid. Cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and easily shreds with a fork.

Shred the Beef: Once cooked, remove the beef from the crockpot and place it on a cutting board. Use two forks to shred the beef into bite-sized pieces.

Combine with Sauce: Return the shredded beef to the crockpot, mixing it well with the sauce. Allow it to soak in the flavors for about 15 minutes on the warm setting.

Serve: Toast the hamburger buns if desired. Load each bun with a generous portion of BBQ beef. Top with coleslaw if using, and serve hot.
