Crockpot Butternut Squash and Turkey Soup

1 medium butternut squash, peeled, seeded, and diced (about 4 cups)

1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

4 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

1 cup canned coconut milk (for creaminess)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté Ground Turkey: In a skillet over medium heat, add olive oil. Once hot, add ground turkey and cook until browned, about 5-7 minutes. Break it apart with a spatula as it cooks. Season with salt and pepper. Drain any excess fat.

    Prep Vegetables: While the turkey cooks, prepare the butternut squash, onion, garlic, carrots, and celery. Place them all into the crockpot.

      Combine Ingredients: Add the browned turkey to the crockpot with the vegetables. Pour in the chicken broth, and stir in thyme, cumin, smoked paprika, and the bay leaf. Season with more salt and pepper if desired.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours, until the vegetables are tender.

          Add Coconut Milk: About 30 minutes before serving, stir in the coconut milk to add creaminess to the broth and adjust seasoning if necessary. Remove and discard the bay leaf.

            Blend if Desired: For a creamier texture, you can blend a portion of the soup using an immersion blender, or transfer some to a blender and puree to your desired consistency before combining it back with the rest of the soup.

              Serve: Ladle the soup into bowls and garnish with fresh parsley. Enjoy it warm with crusty bread or a side salad!
