Crockpot Chili Cheese Pasta Bake

12 oz elbow macaroni

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes (with juices)

1 can (10 oz) tomato sauce

1 can (4 oz) diced green chilies

2 cups shredded cheddar cheese (divided)

1 cup sour cream

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Meat Mix: In a skillet over medium heat, brown the ground beef, breaking it into small pieces until fully cooked. Add diced onion and minced garlic, cooking until the onion is translucent, about 5 minutes. Drain excess grease.

      Mix Ingredients: In the crockpot, combine the cooked macaroni, the ground beef mixture, kidney beans, black beans, diced tomatoes (with juices), tomato sauce, green chilies, 1 cup of cheddar cheese, sour cream, chili powder, cumin, paprika, salt, and pepper. Stir until all ingredients are well mixed.

        Cook in the Crockpot: Cover and cook on low for 4-5 hours or on high for 2-3 hours. Stir halfway through for even heating.

          Add the Cheese: About 30 minutes before serving, sprinkle the remaining 1 cup of cheddar cheese on top of the chili pasta mixture. Cover and continue cooking until the cheese is melted and bubbly.
