Crockpot Creamy Tomato Basil Chicken

4 boneless, skinless chicken breasts

1 can (28 oz) crushed tomatoes

1 cup heavy cream

1 small onion, finely chopped

4 cloves garlic, minced

2 cups fresh basil leaves, chopped (plus extra for garnish)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon red pepper flakes (optional, for a bit of heat)

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 cup grated Parmesan cheese

Cooked pasta or rice, for serving

Prep the Chicken: Season the chicken breasts with salt, pepper, and oregano. Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden (about 3-4 minutes per side). This step adds depth of flavor but can be skipped if you're short on time.

    Combine Ingredients in Crockpot: Place the seared chicken breasts in the crockpot. Add the chopped onion, minced garlic, crushed tomatoes, heavy cream, balsamic vinegar, and red pepper flakes (if using). Stir gently to coat the chicken and combine the ingredients.

      Cook on Low: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

        Add Fresh Basil and Cheese: About 30 minutes before serving, stir in the chopped fresh basil leaves and grated Parmesan cheese. Taste and adjust the seasoning if needed.

          Shred the Chicken: Once done, remove the chicken from the crockpot. Shred it using two forks and return it to the crockpot. Stir to combine everything and allow it to meld together for about 10 minutes on warm.
