2 pounds baby carrots (or whole carrots, peeled and sliced)

⅓ cup pure maple syrup

¼ cup brown sugar, packed

¼ cup unsalted butter, melted

1 teaspoon cinnamon

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Prepare the Carrots: If using whole carrots, peel and slice them into even pieces to ensure even cooking. If using baby carrots, you can leave them whole.

    Mix the Glaze: In a medium bowl, combine the maple syrup, brown sugar, melted butter, cinnamon, salt, and black pepper. Whisk together until the sugar is dissolved and all ingredients are well incorporated.

      Layer in the Crockpot: Place the carrots in the bottom of your crockpot. Pour the maple-brown sugar mixture over the carrots, making sure they are evenly coated.

        Cook: Cover the crockpot with the lid and cook on low for 4-5 hours, or on high for 2-3 hours, until the carrots are tender but not mushy.

          Finish and Serve: Once the carrots are cooked, give them a gentle stir to coat them again in the glaze. Transfer to a serving dish, sprinkle with fresh parsley for a pop of color, and serve warm.
