To create a Crunchy Asian Slaw that remains crisp and refreshing, it's essential to combine the ingredients properly. Begin by adding the shredded cabbage and carrots to a large mixing bowl. When incorporating the other vegetables, such as bell peppers and radishes, layer them on top rather than mixing them in immediately. This method ensures that the crunchiness of each vegetable is preserved.

Ingredients

4 cups green cabbage, shredded

1 cup red cabbage, shredded

1 cup carrots, julienned or grated

1 cup snap peas, trimmed and sliced

1 red bell pepper, thinly sliced

½ cup fresh cilantro, chopped

½ cup green onions, sliced

½ cup roasted peanuts, roughly chopped

For the Dressing:

¼ cup rice vinegar

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

1 clove garlic, minced

1 teaspoon sriracha or chili paste (optional for heat)

Salt and pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, julienned carrots, snap peas, and red bell pepper. Toss to mix well.

Make the Dressing: In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and sriracha (if using). Taste and season with salt and pepper as needed.

Combine: Pour the dressing over the prepared vegetable mixture. Toss everything together until the vegetables are evenly coated with the dressing.

Add Fresh Elements: Gently fold in the chopped cilantro, green onions, and roasted peanuts. Ensure not to over-mix to maintain the crunch.

Chill (Optional): For best flavor, let the slaw sit in the refrigerator for about 20-30 minutes to allow the flavors to meld.

Serve: Give the slaw a final toss before serving. Enjoy it as a side dish, or add protein like grilled chicken or tofu for a complete meal!
