Ingredients

1 medium head of cauliflower, cut into florets

1 cup breadcrumbs (panko for extra crunch)

1/2 cup all-purpose flour

1/2 cup water

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper, to taste

1 cup BBQ sauce (store-bought or homemade)

4 large whole wheat or spinach wraps

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup sliced red onions

1 avocado, sliced

Fresh cilantro, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Cauliflower: In a mixing bowl, whisk together flour, water, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper to create a batter. Dip each cauliflower floret into the batter, then roll it in breadcrumbs until fully coated.

Bake the Cauliflower: Spread the breadcrumb-coated cauliflower florets on the prepared baking sheet in a single layer. Bake in the preheated oven for 20-25 minutes or until the florets are golden brown and crispy, flipping halfway through for even cooking.

Toss in BBQ Sauce: Once the cauliflower is crispy, remove it from the oven and drizzle with BBQ sauce (reserve a bit for serving). Toss to coat evenly.

Assemble the Wraps: Lay out the whole wheat or spinach wraps. Start with a layer of shredded lettuce, followed by the BBQ cauliflower, diced tomatoes, sliced avocado, and red onions. Drizzle with additional BBQ sauce if desired.

Wrap and Serve: Roll up the wraps tightly, tucking in the ends as you go. Slice in half for easier handling. Garnish with fresh cilantro if you like.

Enjoy your meal! Serve immediately and enjoy the crunchiness of the BBQ cauliflower wrapped in wholesome goodness.
