2 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1 tsp smoked paprika

1 tsp garlic powder

Salt and black pepper to taste

Olive oil for frying

4 slices of your favorite bread (sourdough or ciabatta recommended)

1 cup romesco sauce (store-bought or homemade)

1 cup fresh arugula or spinach

1/2 cup sliced roasted red peppers

1/2 avocado, sliced

Lemon slices for garnish

Instructions
 

Prepare the Chicken:

    - Season the chicken breasts with smoked paprika, garlic powder, salt, and black pepper on both sides.

      Dredge the Chicken:

        - Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

          - First, coat each chicken breast in the flour, shaking off the excess.

            - Next, dip the chicken in the beaten eggs, allowing any excess to drip off.

                Fry the Chicken:
