3 cups rolled oats

1 cup sliced almonds

1 cup walnuts, chopped

1/2 cup unsweetened shredded coconut

1/2 cup honey

1/3 cup coconut oil, melted (or vegetable oil)

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup dried fruits (e.g., cranberries, raisins, or apricots) – optional

Preheat the Oven: Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, sliced almonds, chopped walnuts, shredded coconut, ground cinnamon, and salt. Mix well to evenly distribute the ingredients.

      Combine Wet Ingredients: In a separate bowl, whisk together the honey, melted coconut oil, and vanilla extract until well blended.

        Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir until everything is thoroughly coated and mixed together.

          Spread on Baking Sheet: Transfer the mixture to the prepared baking sheet. Spread it out in an even layer, pressing it down slightly with the back of a spatula to help create clusters.

            Bake the Granola: Bake in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it, as granola can go from golden to burnt quite quickly!

              Cool and Add Fruits: Once golden and fragrant, remove the baking sheet from the oven and allow the granola to cool completely. This will help it become crunchy. If using dried fruits, stir them in once cooled.
