Ingredients

2 cups pecan halves

1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup almond butter (or peanut butter)

1/3 cup pure maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup chocolate chips or dried fruits for added flavor

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy removal.

Mix the Dry Ingredients: In a large bowl, combine the pecans, rolled oats, shredded coconut, cinnamon, and salt. Stir until evenly distributed.

Prepare the Wet Mixture: In a small saucepan over low heat, melt the almond butter and maple syrup together. Stir continuously until smooth and well combined. Remove from heat and add in the vanilla extract.

Combine Mixtures: Pour the warm almond butter mixture into the dry ingredients and mix until all components are fully coated. If desired, fold in chocolate chips or dried fruits at this stage.

Shape the Clusters: Using your hands, take small handfuls of the mixture and shape them into clusters. Place them on the prepared baking sheet, leaving some space between each cluster for even baking.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Keep a close eye on them to prevent burning.

Cool Down: Remove from the oven and let the clusters cool on the baking sheet for about 10 minutes. They will harden as they cool.

Store: Once cooled, transfer the clusters to an airtight container. Enjoy them as a snack or a topping for yogurt and smoothies!
