Crunchy Roasted Garlic Chickpeas

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

6 cloves garlic, finely minced

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon sea salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for a kick)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towel and pat them dry very well. Removing excess moisture will help them become extra crispy.

      Mix the Seasonings: In a small bowl, combine the minced garlic, olive oil, smoked paprika, cumin, sea salt, black pepper, and cayenne pepper (if using). Mix well to create a flavorful oil mixture.

        Toss the Chickpeas: In a large mixing bowl, add the dried chickpeas. Pour the garlic-oil mixture over them and toss well to ensure all the chickpeas are evenly coated.

          Spread on Baking Sheet: Transfer the seasoned chickpeas to the prepared baking sheet, spreading them out in a single layer without overcrowding.
