2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper, to taste

1/4 teaspoon garlic powder (optional)

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Prep the Vegetables: Start by peeling and dicing the cucumbers. The size can be to your preference, but aim for bite-sized pieces. Dice the avocados and cut the cherry tomatoes in half. Finely chop the red onion and cilantro to add freshness.

    Mix the Base: In a large mixing bowl, combine the diced cucumbers, avocados, cherry tomatoes, and red onion. Gently toss to mix without breaking the avocado too much.

      Prepare the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, salt, pepper, garlic powder, and red pepper flakes (if using). Adjust the seasoning based on your taste preference.

        Combine Everything: Drizzle the dressing over the cucumber and avocado mixture. Gently fold to ensure everything is well coated in the dressing. Be careful to avoid mashing the avocados.
