2 large cucumbers, peeled and roughly chopped

1 cup fresh mint leaves, tightly packed

1/4 cup fresh lime juice (about 2 limes)

1/3 cup honey or agave syrup (adjust based on sweetness preference)

Pinch of sea salt

2 cups ice cubes

Extra mint leaves and cucumber slices for garnish

Blend the Base: In a blender, combine the chopped cucumbers, fresh mint leaves, lime juice, honey/agave syrup, and sea salt. Blend on high until smooth. If your blender struggles, add a little water to help it along.

    Strain (Optional): For a smoother texture, you can strain the mixture through a fine mesh sieve into a large bowl, pressing down with a spatula to extract maximum juice. This step is optional but will give a lighter slush.

      Combine with Ice: Add the ice cubes to the blender (or to your strained cucumber-mint mixture) and blend again until the ice is crushed and the mixture is slushy in consistency. Adjust sweetness if necessary by adding more honey/agave syrup.

        Serve: Spoon the cucumber mint slush into chilled glasses or bowls. Garnish with extra mint leaves and a slice of cucumber on the rim for an extra touch of elegance.
