Ingredients

2 large cucumbers, peeled and diced

1 cup fresh strawberries, hulled and sliced

1/4 red onion, thinly sliced

1/4 cup crumbled feta cheese (optional)

1/4 cup fresh mint leaves, finely chopped

1/4 cup olive oil

2 tablespoons honey

2 tablespoons balsamic vinegar

Salt and pepper to taste

Instructions

Prepare the Dressing: In a small bowl, whisk together the olive oil, honey, balsamic vinegar, salt, and pepper until well combined. Set aside.

Combine Ingredients: In a large mixing bowl, combine the diced cucumbers, sliced strawberries, and thinly sliced red onion. Gently toss to combine.

Add Feta and Mint: If using, sprinkle the crumbled feta cheese over the salad, and add the chopped mint leaves. Toss gently to distribute without bruising the strawberries.

Dress the Salad: Drizzle the prepared dressing over the salad and toss lightly to coat all the ingredients evenly.

Chill and Serve: For best flavor, let the salad chill in the refrigerator for about 15-30 minutes before serving to let the flavors meld together. Serve chilled and enjoy!
