Ingredients

1 cup (125g) all-purpose flour

1/2 cup (50g) unsweetened cocoa powder

1/2 tsp baking soda

1/4 tsp sea salt

1/2 cup (113g) unsalted butter, softened

1/2 cup (100g) brown sugar, packed

1/4 cup (50g) granulated sugar

1 large egg

1 tsp pure vanilla extract

1 cup (180g) dark chocolate chips (70% cocoa or higher)

1/2 cup (120ml) soft caramel sauce (store-bought or homemade)

Flaky sea salt, for sprinkling on top

Instructions

Prepare the Oven: Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Incorporate Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

Fold in Chocolate Chips: Gently fold in the dark chocolate chips until evenly distributed throughout the cookie dough.

Chill the Dough: Refrigerate the cookie dough for about 30 minutes to help it firm up. This step is optional but helps the cookies maintain their shape.

Scoop the Dough: Using a tablespoon or cookie scoop, drop heaping spoonfuls of dough onto the prepared baking sheets, leaving space between each cookie.

Create a Caramel Well: Using your thumb or the back of a teaspoon, make a small indentation in the center of each cookie dough mound.

Fill with Caramel: Spoon a small amount of the soft caramel sauce into the indentation you created in each cookie. Be careful not to overfill.

Bake: Bake the cookies in the preheated oven for about 10-12 minutes, or until the edges are set but the centers are still soft. The cookies will continue to firm up as they cool.

Sprinkle with Flaky Salt: Once out of the oven, immediately sprinkle a pinch of flaky sea salt on top of each cookie.

Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, enjoy the gooey chocolate caramel goodness! Perfect with a glass of milk or a cup of coffee.
