Date Brownies: A Naturally Sweet and Delicious Treat

1 cup medjool dates, pitted and chopped

1/2 cup unsweetened cocoa powder

1/2 cup almond flour (or all-purpose flour)

1/4 cup coconut oil, melted (or unsalted butter)

1/2 cup almond milk (or any milk of your choice)

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark chocolate chips (optional for extra decadence)

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

    Prepare the Dates: If your medjool dates are a bit firm, soak them in warm water for about 10 minutes to soften. Drain and then chop them finely.

      Blend the Ingredients: In a large mixing bowl, combine the chopped dates, almond flour, cocoa powder, melted coconut oil, almond milk, vanilla extract, baking powder, and salt. Use an immersion blender or a food processor to blend until a smooth, thick batter forms. If using, fold in the dark chocolate chips and nuts with a spatula.

        Pour into the Pan: Transfer the brownie mixture into the prepared baking pan, spreading it evenly into the corners with a spatula.

          Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges look set and a toothpick inserted in the center comes out mostly clean (todlo capped with a few moist crumbs is perfect).

            Cool and Slice: Once baked, remove the brownies from the oven and let them cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely before slicing into squares.
