Ingredients

1 ½ cups Biscoff cookies, crushed

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup Biscoff spread

½ cup sour cream

1 tsp ground cinnamon

A pinch of salt

Extra Biscoff cookies for topping (optional)

Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed Biscoff cookies and melted butter until well mixed. Press this mixture firmly into the bottom of a 9x9-inch baking pan lined with parchment paper, creating an even layer. Bake for 10 minutes, then allow to cool while preparing the filling.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add the granulated sugar, continuing to mix until fully incorporated.

Add the flavorings: Mix in the vanilla extract, followed by the eggs, one at a time, mixing on low speed until just blended to avoid overmixing. Add the Biscoff spread, sour cream, ground cinnamon, and salt, then mix until everything is combined and smooth.

Assemble the bars: Pour the cheesecake filling over the cooled Biscoff cookie crust. Use a spatula to spread it evenly. If you wish, you can create swirls with extra Biscoff spread by dropping spoonfuls on top of the filling and swirling with a knife or toothpick.

Bake the cheesecake: Bake in the preheated oven for 30-35 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for an additional 1 hour.

Chill: After cooling, refrigerate the cheesecake bars for at least 4 hours or overnight for the best results.

Serve: Once chilled, lift the bars out of the baking pan using the parchment paper. Cut into squares and, if desired, top each square with a piece of Biscoff cookie for an extra touch of decadence.
