For the Red Velvet Crust:

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

1 tbsp red food coloring

1 tbsp buttermilk

For the Strawberry Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

2 cups fresh strawberries, pureed

1 tbsp cornstarch

1 tsp lemon juice

1 cup whipped cream (for topping)

For Decoration:

Fresh strawberries, halved

Crushed graham crackers

Whipped cream

Instructions
 

Prepare the Red Velvet Crust:

    - Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.

      - In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well mixed.

        - In another bowl, beat the softened butter until creamy. Add eggs, vanilla extract, and buttermilk, followed by the red food coloring. Mix until smooth.

          - Gradually add the dry ingredients to the wet mixture, stirring until just combined. Pour the batter into the prepared pan and spread evenly.

            - Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.

              Make the Strawberry Cheesecake Layer:

                - In a large bowl, beat the softened cream cheese until creamy and smooth. Gradually add sugar and vanilla extract and mix until incorporated.

                  - Add eggs one at a time, mixing well after each addition.

                    - In a separate bowl, combine the strawberry puree, cornstarch, and lemon juice. Mix until combined, then fold the strawberry mixture into the cheesecake batter.

                      - Pour the strawberry cheesecake mixture over the cooled red velvet crust, spreading evenly.

                        Bake the Cheesecake:

                          - Lower the oven temperature to 325°F (160°C). Bake the cheesecake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

                            - Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.

                              - Remove from the oven and refrigerate for at least 4 hours, ideally overnight.

                                Decorate and Serve:

                                  - Before serving, whip the cream until stiff peaks form. Spread or pipe whipped cream on top of the cheesecake.

                                    - Decorate with fresh strawberry halves and a sprinkle of crushed graham crackers for an elegant finish.
