Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup carrots, julienned

1 cup bell pepper, sliced (any color)

2 cups snap peas or broccoli florets

3 cups chicken broth

2 cups egg noodles (or your favorite noodle)

1/4 cup soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon ground ginger

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.

    Add the minced garlic and sauté for an additional minute until fragrant.

      Increase the heat to medium-high and add the chicken pieces. Season with salt and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.

        Stir in the carrots and bell pepper, cooking for another 3-4 minutes, until they begin to soften.

          Add the snap peas (or broccoli), chicken broth, soy sauce, honey (or maple syrup), rice vinegar, and ground ginger. Bring the mixture to a boil.

            Once boiling, add the egg noodles and stir. Reduce the heat to a simmer, cover the pot, and cook for about 10-12 minutes or until the noodles are tender and the liquid has mostly absorbed. Stir occasionally to prevent sticking.

              Taste and adjust the seasoning if necessary, adding more salt, pepper, or soy sauce as desired.

                Once cooked, remove from heat and let it sit for a few minutes before serving.

                  Garnish with fresh cilantro or green onions for added flavor. Serve hot and enjoy your delicious one-pot sweet and savory chicken noodles!
