Ingredients

For the Cupcakes:

2 cups all-purpose flour

1 1/2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cocoa powder

1 cup vegetable oil

1 cup buttermilk, room temperature

2 large eggs, room temperature

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon white vinegar

For the Cream Cheese Frosting:

1/2 cup unsalted butter, softened

8 oz cream cheese, softened

4 cups powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C). Line a standard muffin tin with cupcake liners.

      Mix Dry Ingredients:

In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder until well combined. Set aside.

          Combine Wet Ingredients:

In a large bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth and fully incorporated.

              Combine Mixtures:

Gradually add the dry ingredients to the wet mixture, stirring gently just until combined. Be careful not to overmix; a few lumps are okay.

                  Fill the Cupcake Liners:

Divide the batter evenly among the cupcake liners, filling each liner about two-thirds full.

                      Bake:

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cupcakes cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                          Prepare the Cream Cheese Frosting:

In a large mixing bowl, beat the softened butter and cream cheese together until creamy and smooth. Gradually add the powdered sugar, one cup at a time, beating until well blended. Add the vanilla extract and a pinch of salt, mixing until combined.

                              Frost the Cupcakes:

Once the cupcakes are completely cool, generously frost each cupcake with the cream cheese frosting using a piping bag or a knife.

                                  Decorate (Optional):

For a little extra flair, sprinkle red velvet cake crumbs on top of the frosting or add a chocolate heart or raspberry for decoration.

                                      Serve and Enjoy:

Serve the cupcakes at room temperature and relish the beautiful, moist texture and rich flavors!
