Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

Prepare the Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Cream the Butter and Sugar: In a separate mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 5-7 minutes.

Add Eggs and Bananas: Add the eggs, one at a time, mixing well after each addition. Then, add the mashed bananas and vanilla extract, mixing until combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and finish with the dry ingredients, mixing until just combined. Fold in the chocolate chips.

Bake the Cakes: Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let them cool for 10 minutes in the pans before transferring to a wire rack to cool completely.

Make the Ganache: In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate and butter. Stir until smooth and creamy. Let it cool to thicken.

Prepare the Banana Buttercream: In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Add the mashed bananas, milk, and vanilla extract, and beat until smooth and fluffy.

Assemble the Cake: Place one layer of the chocolate cake on a serving platter. Spread a layer of banana buttercream on top, followed by a drizzle of ganache. Repeat for the second layer, placing the third layer on top.

Final Frosting and Decoration: Frost the top and sides of the cake with the remaining banana buttercream. Drizzle the top with chocolate ganache and garnish with chocolate shavings and banana slices.

Chill and Serve: Chill the cake for at least 30 minutes to set the frosting before slicing. Serve and enjoy!
