Ingredients

1 can (15 oz) black beans, drained and rinsed

1 cup cooked quinoa

1 small red onion, finely chopped

1 bell pepper (any color), diced

2 cloves garlic, minced

1 cup fresh spinach, chopped

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (or gluten-free alternative)

2 tablespoons olive oil

Burger buns of choice

Toppings: avocado slices, lettuce, tomato, pickles, and your favorite sauces

Instructions

Mash Beans: In a large mixing bowl, use a fork or potato masher to lightly mash the black beans. Leave some chunks for texture.

Combine Ingredients: Add the cooked quinoa, chopped onion, bell pepper, minced garlic, chopped spinach, cumin, smoked paprika, salt, and pepper to the bowl. Mix well until all the ingredients are thoroughly combined.

Incorporate Breadcrumbs: Gradually mix in the breadcrumbs until the mixture holds together but is not overly dry. If it feels too wet, add a little more breadcrumbs.

Form Patties: With your hands, shape the mixture into 4-6 equal-sized patties, ensuring they are nicely compact. If they seem crumbly, chill them in the refrigerator for about 15 minutes to help them hold together.

Preheat Grill: Preheat your grill or grill pan with a little olive oil over medium heat.

Grill Patties: Place the patties on the grill, cooking for about 5-7 minutes on each side, or until they have nice grill marks and are heated through.

Toast Buns: In the last couple of minutes, add your burger buns to the grill to toast lightly.

Assemble Burgers: Remove the patties and buns from the grill. Place a patty on each bun and top with avocado slices, lettuce, tomato, pickles, and your favorite sauces.

Serve: Enjoy your grilled veggie burgers fresh off the grill with a side of sweet potato fries or a fresh salad!
