Easy Apple Pie Egg Rolls

2 large apples (Granny Smith or Honeycrisp work well), peeled, cored, and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/3 cup brown sugar

2 tablespoons granulated sugar

1 tablespoon all-purpose flour (to thicken)

10-12 egg roll wrappers

Oil for frying (vegetable or canola)

Powdered sugar for dusting (optional)

Vanilla ice cream for serving (optional)

Instructions
 

Prepare the Apple Filling:

    - In a medium bowl, combine the diced apples with lemon juice, cinnamon, nutmeg, brown sugar, granulated sugar, and flour. Toss until the apples are well coated. Set aside to let the flavors meld while you prepare the egg rolls.

      Assemble the Egg Rolls:

        - Lay an egg roll wrapper on a clean surface with one corner facing you (like a diamond shape). Place about 2 tablespoons of the apple filling near the center of the wrapper.

          - Moisten the edges of the wrapper with a little water using your fingers or a brush. Fold the bottom corner over the filling, then fold the sides inward and roll it up tightly. Seal the top corner by pressing it down. Repeat with remaining wrappers and filling.

            Fry the Egg Rolls:

              - In a large skillet or deep frying pan, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). To test if the oil is ready, drop in a small piece of an egg roll wrapper; it should sizzle immediately.

                - Fry the egg rolls in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes per side or until they are golden brown and crispy. Use tongs to carefully flip them halfway through. Drain on a plate lined with paper towels.

                  Serve:
