Easy Basil & Roasted Tomato Soup Recipe

2 lbs ripe tomatoes, halved

1 medium onion, chopped

4 cloves garlic, minced

4 cups vegetable broth

1 cup fresh basil leaves, packed

2 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

Optional garnishes: additional basil leaves, a drizzle of olive oil, or croutons

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Tomatoes: Place the halved tomatoes on a baking sheet, cut side up. Drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper. Bake in the preheated oven for about 25-30 minutes until the tomatoes are soft and slightly caramelized.

      Sauté the Aromatics: In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes until translucent. Add the minced garlic and continue to sauté for another 2 minutes until fragrant.

        Combine Ingredients: Once the tomatoes are roasted, add them to the pot along with the vegetable broth and balsamic vinegar. Bring to a simmer and let it cook for about 10 minutes, allowing all the flavors to meld together.

          Blend the Soup: Remove the pot from heat, and stir in the fresh basil leaves. Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the mixture to a blender and blend in batches.

            Final Seasoning: Taste and adjust seasoning with salt and pepper as needed. If the soup is too thick, feel free to add more vegetable broth to reach your desired consistency.
