Ingredients

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 tablespoon ginger, minced

1-2 teaspoons freshly ground black pepper (adjust to taste)

2 green onions, sliced for garnish

Steamed rice (for serving)

Instructions

In a mixing bowl, combine the chicken pieces with soy sauce, oyster sauce, and cornstarch. Toss to coat evenly and let marinate for about 15 minutes while you prepare the vegetables.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken to the skillet, making sure not to overcrowd the pan. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant.

Add the sliced red and green bell peppers to the skillet and stir-fry for about 3-4 minutes, until they are tender-crisp.

Return the cooked chicken to the skillet, sprinkling the freshly ground black pepper over the top. Stir everything together for another 2-3 minutes, allowing the flavors to meld.

Taste and adjust the seasoning, adding more black pepper if desired.

Remove from heat, garnish with sliced green onions, and serve hot over steamed rice.
