Ingredients

1 lb large shrimp, peeled and deveined

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 cup red cabbage, shredded

1 ripe avocado, sliced

1/2 cup fresh cilantro, chopped

Juice of 1 lime

8 small corn or flour tortillas

1/2 cup sour cream or Greek yogurt (for topping)

Salt and pepper to taste

Instructions

Prep the Shrimp: In a bowl, toss the shrimp with Cajun seasoning, salt, pepper, and olive oil until well coated. Set aside to marinate for about 10-15 minutes while you prepare the toppings.

Prepare the Toppings: In a separate bowl, combine the shredded red cabbage, chopped cilantro, and lime juice. Mix well and season with salt and pepper to taste. This will add a fresh crunch to your tacos.

Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque, which usually takes about 5-6 minutes in total. Remove from heat.

Warm the Tortillas: While the shrimp are cooking, heat the tortillas in another skillet or microwave until warm and pliable.

Assemble the Tacos: Place a few shrimp on each tortilla, then top with the cabbage-cilantro mixture. Add slices of avocado and a dollop of sour cream or Greek yogurt on top.

Serve: Add an extra squeeze of lime over the tacos for an added kick and serve immediately.
