Easy Cheesy Pepperoni Pizza Muffins

1 ½ cups all-purpose flour

1 tbsp baking powder

½ tsp garlic powder

½ tsp Italian seasoning

½ tsp salt

1 cup shredded mozzarella cheese

1 cup mini pepperoni slices

1 large egg

1 cup milk

¼ cup olive oil

½ cup marinara sauce (plus extra for dipping)

Optional: Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with paper liners to prevent the muffins from sticking.

    Combine Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, baking powder, garlic powder, Italian seasoning, and salt until well combined.

      Mix in Cheese and Pepperoni: Stir in the shredded mozzarella cheese and mini pepperoni slices into the dry mixture until they are evenly coated with flour. This will help prevent them from sinking to the bottom later.

        Prepare Wet Ingredients: In a separate bowl, beat the egg and then add in the milk and olive oil. Mix well until everything is well combined.

          Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold everything together using a spatula until just combined. Be careful not to overmix—the batter should be a bit lumpy.

            Add Marinara: Fold in the marinara sauce into the batter gently, ensuring it’s evenly distributed but still a bit marbled through the mixture for a fun look.

              Fill Muffin Tin: Divide the batter evenly among the 12 muffin cups, filling each about ¾ full. This allows room for the muffins to rise.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                  Cool & Serve: Once baked, allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Serve warm, with extra marinara sauce on the side for dipping. Garnish with fresh basil if desired.
