Easy Cheesy Quinoa and Spinach Bake

1 cup quinoa (rinsed)

2 cups vegetable broth (or water)

2 cups fresh spinach (chopped)

1 cup ricotta cheese

1 cup mozzarella cheese (shredded)

½ cup Parmesan cheese (grated)

2 large eggs

2 cloves garlic (minced)

1 tsp onion powder

1 tsp salt (or to taste)

½ tsp black pepper

½ tsp red pepper flakes (optional)

1 tsp olive oil

Fresh parsley (for garnishing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with olive oil.

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and set aside to cool slightly.

      Sauté Spinach: In a skillet over medium heat, add a splash of olive oil. Sauté the minced garlic for 1 minute until fragrant, then add the chopped spinach. Cook until wilted, about 2-3 minutes. Remove from heat.

        Mix Ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed spinach, ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, eggs, onion powder, salt, black pepper, and red pepper flakes (if using). Mix until well combined.

          Transfer to Baking Dish: Pour the quinoa mixture into the prepared baking dish, spreading it evenly.

            Add Toppings: Sprinkle the remaining mozzarella and Parmesan cheeses evenly on top of the quinoa mixture.

              Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbling.

                Serve: Once baked, let it cool for 5 minutes. Garnish with chopped fresh parsley before serving.
