1 lb boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 large red bell pepper, sliced

1 large green bell pepper, sliced

1 large yellow onion, sliced

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

8 small flour or corn tortillas

Optional toppings: shredded cheese, sour cream, guacamole, or salsa

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken, olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Mix well to ensure the chicken is evenly coated. Marinate for 15-30 minutes for the best flavor.

    Cook The Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken strips. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and fully cooked. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add a little more olive oil if needed, and toss in the sliced bell peppers and onions. Sauté for about 5-7 minutes, stirring often, until they are soft and slightly charred.

        Combine: Add the cooked chicken back into the skillet with the sautéed vegetables. Drizzle with lime juice and stir everything together. Cook for an additional 1-2 minutes to heat through.

          Warm the Tortillas: While the chicken and veggies are finishing up, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and heat them in the oven at low temperature.
