Easy Cottage Cheese Egg Bake

1 cup cottage cheese

6 large eggs

1 cup spinach, chopped

1 small bell pepper, diced (any color)

1 small onion, diced

1 cup shredded cheese (cheddar or mozzarella)

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp paprika (optional for a kick)

1 tbsp olive oil

Fresh herbs for garnish (optional, such as parsley or chives)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a skillet over medium heat, add olive oil. Once hot, sauté the diced onion and bell pepper until they soften, about 3-4 minutes. Add chopped spinach and cook until wilted, about another 2 minutes. Remove from heat and set aside.

      Mix the Egg Base: In a large mixing bowl, whisk the eggs until they are well combined. Add the cottage cheese, garlic powder, salt, black pepper, and paprika (if using), and mix well.

        Combine: Stir in the sautéed vegetables and shredded cheese into the egg mixture until evenly dispersed.

          Prepare the Baking Dish: Grease a 9x9-inch baking dish (or any similar-sized oven-safe dish) with cooking spray or a little olive oil to prevent sticking.
