2 pounds beef chuck, cut into 1-inch cubes

3 tablespoons all-purpose flour

2 tablespoons olive oil

1 medium onion, chopped

3 garlic cloves, minced

4 carrots, sliced into rounds

3 potatoes, peeled and cubed

2 cups beef broth

1 cup red wine (or additional beef broth)

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prep the Beef: In a large bowl, toss the beef cubes with flour until evenly coated. This will help thicken the stew later.

    Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the flour-coated beef in batches (avoid overcrowding) and brown on all sides, about 5-7 minutes per batch. Remove the beef and set it aside.

      Sauté Vegetables: In the same pot, reduce the heat to medium. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Combine Ingredients: Add the browned beef back to the pot, followed by the carrots, potatoes, beef broth, red wine, and tomato paste. Stir to combine.

          Season the Stew: Add the dried thyme, rosemary, bay leaf, salt, and pepper. Stir again and bring the mixture to a simmer.
