Ingredients
  

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

1 cup breadcrumbs (use panko for extra crunch)

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 large eggs

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Breading: In a large bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure the breadcrumbs are evenly coated with the spices.

      Set Up a Dredging Station: In another bowl, whisk the eggs until lightly beaten. This will be used to help the breadcrumbs adhere to the chicken.

        Coat the Chicken: Dip each piece of chicken first into the egg mixture, allowing the excess to drip off, then roll it in the breadcrumb mixture, pressing gently to ensure a good coating.

          Arrange on Baking Sheet: Place the coated chicken bites on the prepared baking sheet in a single layer. Drizzle olive oil over the top to promote even browning.

            Bake: Bake in the preheated oven for 15-20 minutes or until the chicken bites are golden brown and cooked through (internal temperature should reach 165°F or 74°C).
