Easy Pancake Sausage Casserole

1 pound breakfast sausage, crumbled

2 cups pancake mix (preferably buttermilk)

2 cups milk

4 large eggs

1/4 cup maple syrup (plus extra for serving)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1 cup shredded cheddar cheese

1/2 cup chopped green onions (optional, for garnish)

Cooking spray or butter, for greasing the baking dish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Cook Sausage: In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, about 6-8 minutes. Drain any excess grease and set aside.

      Prepare Pancake Batter: In a large bowl, whisk together the pancake mix, milk, eggs, maple syrup, vanilla extract, baking powder, and salt until smooth and well combined.

        Combine Ingredients: Fold the cooked sausage into the pancake batter, followed by 1/2 cup of shredded cheddar cheese.

          Pour Mixture: Pour the sausage and pancake mixture into the prepared baking dish, spreading it evenly with a spatula.

            Add Cheese: Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top of the batter.
