Easy Sheet Pan Fajitas

1 pound chicken breast, sliced into thin strips

1 bell pepper (red, yellow, or green), sliced

1 large onion, sliced

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Tortillas (for serving)

Optional toppings: sour cream, guacamole, salsa, shredded cheese

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Veggies: In a large bowl, toss the sliced bell pepper and onion with 1 tablespoon of olive oil, half of the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.

      Season the Chicken: In another bowl, combine the chicken strips with the remaining tablespoon of olive oil, the rest of the chili powder, the smoked paprika, and some salt and pepper. Squeeze the lime juice over the chicken for added flavor.

        Arrange on Sheet Pan: Lay the seasoned chicken and vegetables evenly on a large sheet pan. Make sure to spread them out to ensure even cooking.

          Bake: Place the sheet pan in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the veggies are tender.

            Toss and Serve: After baking, remove from the oven and give everything a good toss. Taste and adjust seasoning if necessary. Garnish with fresh cilantro.

              Warm the Tortillas: If desired, warm your tortillas in a dry skillet over medium heat for about 30 seconds on each side.

                Assemble Fajitas: Serve the chicken and veggie mixture in tortillas, and top with your choice of sour cream, guacamole, salsa, or shredded cheese.
