Ingredients

4 (6 oz) salmon fillets, skin-on

1 lb asparagus, trimmed

2 tablespoons olive oil

1 lemon, zested and juiced

2 cloves garlic, minced

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried rosemary)

Salt and pepper, to taste

Lemon slices, for garnish

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy clean-up.

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and pepper.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable bag. Pour half of the marinade over the salmon, ensuring each fillet is well-coated. Let marinate for 15-20 minutes.

Toss the Asparagus: In a large bowl, add the trimmed asparagus, drizzle with the remaining marinade, and toss to coat evenly.

Arrange on the Sheet Pan: Place the marinated salmon fillets skin-side down on one side of the prepared sheet pan. On the other side, spread the coated asparagus.

Bake: Put the sheet pan in the preheated oven and bake for about 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender yet crisp.

Serve: Remove the sheet pan from the oven. Garnish the salmon with fresh parsley and lemon slices. Serve immediately with any remaining roasted asparagus on the side.
