8 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

3 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (optional, or use chicken broth)

1 lemon, juiced and zested

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine and set aside.

    Prepare the Shrimp: In a large skillet, heat 2 tablespoons of butter and 3 tablespoons of olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes. Sauté until fragrant, about 1-2 minutes.

      Cook the Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, add the white wine (or broth) and let it simmer for 2-3 minutes, reducing slightly. Stir in the reserved pasta water, remaining butter, lemon juice, and lemon zest. Mix well to combine.

          Combine Everything: Add the drained linguine to the skillet and toss to coat in the sauce. Then, return the cooked shrimp to the skillet along with the fresh parsley. Toss again to combine all the ingredients thoroughly.

            Serve: Plate the shrimp scampi linguine and garnish with additional parsley and grated Parmesan cheese if desired. Enjoy warm!
