Easy Shrimp Tacos with Cabbage Slaw

1 pound medium shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

8 small corn tortillas

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, julienned

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon mayonnaise (optional)

Sliced avocado and lime wedges for serving

Instructions
 

Prepare the Shrimp: In a medium bowl, combine the olive oil, chili powder, paprika, garlic powder, cumin, salt, and pepper. Add the shrimp and toss to coat evenly. Set aside to marinate for about 10 minutes.

    Make the Cabbage Slaw: In a large bowl, combine the green cabbage, red cabbage, carrot, and cilantro. In a small bowl, mix the lime juice with the mayonnaise (if using) and a pinch of salt. Pour the dressing over the slaw and toss to combine. Set aside to let the flavors meld.

      Cook the Shrimp: Heat a nonstick skillet over medium-high heat. Add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through.

        Warm the Tortillas: While the shrimp cooks, heat another skillet or a griddle over medium heat. Warm the corn tortillas for about 30 seconds on each side until pliable.

          Assemble the Tacos: Place a few shrimp in the center of each tortilla. Top with a generous amount of cabbage slaw and a few slices of avocado.

            Serve: Squeeze fresh lime juice over the top and enjoy your zesty shrimp tacos with additional lime wedges on the side.
