1 medium spaghetti squash

2 tablespoons olive oil

Salt and pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Additional Parmesan, for serving

Roast the Spaghetti Squash: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with 1 tablespoon of olive oil and sprinkle with salt and pepper. Place the halves cut-side down on a baking sheet and roast for 30-40 minutes, or until the flesh is tender and easily shreds into spaghetti-like strands with a fork.

    Prepare the Alfredo Sauce: While the squash is roasting, heat the remaining tablespoon of olive oil in a medium-sized saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to let it brown.

      Create the Creamy Base: Pour in the heavy cream and bring it to a gentle simmer. Reduce the heat to low, then slowly whisk in the grated Parmesan cheese until the sauce is smooth. Add salt, pepper, and nutmeg (if using) to taste. Keep the sauce warm on low heat.

        Shred the Squash: Once the spaghetti squash is done, remove it from the oven and let it cool for a few minutes. Using a fork, gently scrape the flesh to create spaghetti-like strands.

          Combine: Add the shredded spaghetti squash to the Alfredo sauce, tossing to combine and ensuring all the strands are well coated.
